That's a lot of ginger. More than I buy and I use it for cooking Japanese food every other day.
It does freeze quite well though...
I'd probably have done that too.I reckon I'd use a 'bulk buy, better value' excuse if asked why I bought that much :-)

I once bought an artichoke cos I thought it looked great but I hadn't a clue what it was. I thought it was some kind of exotic fruit!

As noted, it does freeze well. I always put mine into the freezer and when I need it just take it out frozen and grate it and put it back. The amount you have will last forever!
